| My sauces are sold primarily at country markets on the South Coast of NSW Australia. Because of the growing number of inquiries about gluten contained in my product I decided to make a gluten free Worcestershire sauce with the hope of maintaining the full, rich flavour of my original version. After many months of consultation with Cheryl Price at the Coeliac Society NSW office I learned much about the sources of gluten in various food products and therefore believe my sauce contains no gluten. The sale of several hundred bottles substantiates my claim. The concern for any food manufacturer when removing what are considered "essential ingredients" to a traditional flavour is arriving at a product which is not insipid. This was achieved far better than I had hoped. More than 280 bottles were given to coeliac sufferers in return for their feed-back. Responses were all positive except for one who was allergic to any soya product. According to the Society many coeliacs are now being found intolerant to soya. My product is now also soya free with a superb rich flavour smooth enough for children. |
